It is a place I didn’t anticipate traveling to, but here we are. With the knowledge we have now, we have decided to move towards gluten free. I love baked goods, so I have been doing a lot of experimenting. The caved in muffins were a huge disappointment, but we are “rising” above it.
Here is the recipe for my very successful chocolate cake experiment. Hey, if you can get chocolate right, everything will be fine.
Heidi’s Gluten Free Chocolate Cake
Step 1: Grind grain. I used a combination of oat groats, brown rice, and flax seeds. (Oats could be a problem, so you may need to substitute.)
Step 2: Combine
- 1 2/3 c flour
- 1/4 c cocoa powder
- 1 t baking powder
- 1/2 t salt
- 1 T arrowroot powder
Step 3: Add
- 1/3 c olive oil
- 2/3 c honey
- 1 c water
- 1 t apple cider vinegar
Step 4: Stir well and pour into greased 9 x9 baking dish.
Step 5: Sprinkle some chocolate chips on top.
Step 6: Bake 350 degrees for 35 minutes.
Step 7: Enjoy!
